Hearty Salad Captures my Heart

We eat a lot of salad in the summer- filling ones that don't require much work.  And since the weather has been sunny and non-February-esque lately, we've started doing this early.  We love it because the ingredients usually last for several days, and you can mix it up so it's not the same meal every night. We have it with french bread.  And, clearly, wine.  Typical ingredients:

Greens (I like spinach, he likes romaine)
chopped red onions
chopped bell peppers
garbanzo beans
shredded cheese
sunflower seeds

For Emily:
hard boiled egg, cut up
 
For Charlie:
chicken (it's great if you have leftover chicken. Sometimes he'll cook a few day's worth so we can have multiple salads)

Sometimes a good option:
Sauteed tofu
homemade croutons
roasted vegetables, if we have any leftover (potatoes, squash or carrots are the best)

Charlie's favorite salad dressing is this Asian orange sesame that's like $4 per jar.  Let's learn to make homemade salad dressing instead, please.
